Dinner at the Pattillo's

I never would have thought that I would enjoy cooking as much as I have during my short time of being a wife. Before I got married my dinner usually consisted of a bowl of cereal or if I was feeling really good maybe a bowl of spaghetti (just noodles and sauce, of course). When I got married I quickly figured out that a bowl of cereal would not cut it for my husband. I guess that is more of a "girl" meal. 
Thankfully my mom cooked all the time so I quickly started requesting recipes from my favorite foods that she cooked. I thought I would share some of Brian and my favorite recipes. Enjoy! 


Chicken Enchiladas


1 pkg. Medium size corn tortillas ( I use around 8-10)
grated cheese
16 oz. Sour cream
1 can black beans
1 (4.5oz) chopped green chilies (optional)
1 can cream of chicken soup
chicken, cooked and chopped (you can even use canned chicken)

Mix soup, beans, chilies, sour cream, and chicken together.  Put 2 tablespoons of the mix in each tortilla, roll up and place seam side down in a large baking dish.  Pour excess filling on top.  Sprinkle with cheese.  Bake at 425 degrees for 20 minutes or 350 degrees for 45 minutes if you have made a double recipe.


Lasagna



1 pound hamburger meat
1 small and 1 regular size can of tomato sauce (8 oz. & 15 oz.)
1 small can tomato paste (6 oz.)
3/4 t. pepper
1 t. oregano
1 small carton of small curd cottage cheese
1 package of mozzarella cheese
1 package lasagna noodles

Cook your noodles according to the directions on the package. Brown hamburger meat...season it with garlic salt while cooking (I just sprinkle some on). Drain off excess grease if any. Remove from stove.......(turn the burner down) and add the seasoning, tomato sauce, and tomato paste. Simmer for 15-20 minutes on low.......long enough to blend the flavors. Pam the baking dish.

Layer...............
Lasagna noodles
Cottage cheese
Meat sauce
Mozzarella Cheese

Bake for about 20 minutes at 350 degrees.
